August Flavor of the Month: Tang Dreamsicle
Since I get to make ice cream with Top Churn’s amazing customers and experiment with a variety of unique ingredients and techniques, I thought it’d be fun to share some of our favorite recipes. Going forward stay tuned for delicious ideas and tips right here! Having said that, I recently met the owners of ButterChurn, a delicious southern-style buffet in Aransas Pass Texas (by Corpus Christi). They have been adding Tang to their Vanilla soft serve mix for years to make an addictive Orange Creamsicle flavor. Having a storage of recipes is always great because I witnessed a customer complaining that they were only serving vanilla and chocolate while I was there.
Here is a simple, yet mouthwatering recipe for making an Orange Creamsicle flavor from scratch.
Ingredients:
- 4 cups whole milk (950 ml)
- 2 cups heavy cream (475 ml)
- 1 ½ cups granulated sugar (300 g)
- ½ cup Tang powder (120 g)
- 1 cup pineapple juice (240 ml)
- 2 tablespoons vanilla extract
- Pinch of salt
Instructions:
- Prepare the Base:
- In a large saucepan, combine the whole milk, heavy cream, and the sugar.
- Heat over medium heat until the mixture is warm, and the sugar is dissolved, but not boiling.
- Cook the mix:
- Cook the mixture over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (around 170°F or 75°C). Be careful not to let it boil.
- Add Flavorings:
- Remove the saucepan from heat and stir in the Tang powder, pineapple juice, vanilla extract, and a pinch of salt. Mix everything and mix until it is an even consistency.
- Chill the Mixture:
- Pour the mixture through a fine-mesh sieve into a large bowl to remove any solids. Let the mixture stand and chill for at least 30 minutes.
- Churn the Ice Cream:
- Once chilled, pour the mixture into your Top Churn machine or any ice cream maker & freeze.
- Share and Enjoy!
This recipe is 100% from scratch, but you can replicate this & still have a fantastic flavor by adding some of these ingredients to your existing base or vanilla mix. Be sure to adjust the portions based on your preference or the preference of your clients.
